Cooking Method
Leave your piece out of the fridge for about 30-45min so that the meat approaches room temperature and ensure even cooking. Cover your roast with your favorite rub and cook in your over at 250F with a probe thermometer put in horizontally from the side, in the middle, half way through the cut, always away from the bones. Once your roast is about 5 degrees 3-5 degrees from your desired temperature, your remove it, cover it with aluminum foil and let it rest for 20-25min. In this this you can prepare the rest of your prep or enjoy a glass of wine, whatever works for you! Increase your over temperature to HI Broil, base your roast with butter and put the rested meat back in the oven until a nice dark golden crust is formed, about 10min.
At this stage, remove the roast, carve the meat away from your bone, slice to your desired thickness and serve. No resting is required after the broiling as the meat had already rested. The reverse sear method we are using also ensure that the roast cooks evenly through and through.
